Baking Here We Go

Since cooking with kids can be a shared family activity, start simple such as muffins for instance. You may ask the kids to help you with gathering the ingredients for this dish.

  • You will need 2 cups of whole meal flour, 1/2 cup brown sugar, 1/2 cup vegetable oil, 2 eggs, 1 cup buttermilk and 1 cup mashed banana plus walnuts or almonds or whatever you may have on hand for garnish.
  • Ask the kids to help you grease a 12-piece muffin pan lined with paper cases.
  • Preheat the oven to 180 degrees Celsius. Sift the flour into a large bowl and add the brown sugar to combine.
  • Let the kids pour in the buttermilk into the mixture together with the vegetable oil and add eggs.
  • Then pour this mixture into the mashed bananas and beat until just combined.
  • Spoon the mixture into the muffin tray and top with a walnut or raisin and bake for fifteen minutes.
  • Cool slightly on a rack. By this time, your kids will be hungry enough to eat the muffins.
  • Serve by adding lashings of molasses or honey. Add sweetened yogurt as a side dish instead of whipped cream for a delicious teatime treat.

This recipe makes 12 muffins. This muffin recipe is great for snacks or breakfast and even for kids' packed lunch.

A wise parent wants to ensure that the kids have healthy lunch in school and one that's tasty too. Keeping your kid well fed means that they actually eat their lunch from snacks to sandwiches so delicious that will even satisfy the picky eater among them. You can include fresh fruit as a dessert or vegan muffins, a bit of a vegan pizza, vegan mac and cheese, vegan cheese wraps packed with salad greens, or a vegan salad with a fruit juice on the side. Whatever pleases your kids make sure that they have a good start with vegan recipes for kids and one that will last a lifetime.
